Last week my housemate Juliet made the most beautiful rainbow cupcakes, with each colour in a different layer! Inspired by this (but unsure how to make them, as she was away afterwards) I bought a bunch of different food colourings from a little sweet shop and made vanilla cupcakes in candy colours.
The recipe I used was again from The Hummingbird Bakery Cookbook, but I added the food colourings and used cream cheese frosting as opposed to the suggested vanilla frosting - I can't get enough of it! On some I used up leftover lemon icing from a cake I made the other week, which did not have a perfect consistency (see the cupcakes at the back!) but still tasted yummy.
The multicoloured cases and pick-n-mix toppers just added to the delightful look.

Aww thanks so much DaphYin! That means a lot. It's amazing how much more exciting cakes can look when you add a few drops of food colouring! It's well worth investing in a few. That said, I was lucky enough to find some that were only 75p each! :-)
